This was a hit. I was looking for a way to use up the mounds of greens I had from my co-op share this week, and a search of Molly Yeh's website offered up “A Big Green Cobbler.” I didn’t have all of the ingredients on hand, but I was able to adapt it easily with what I had on hand, replacing the gruyere with cheddar, squeezing a little lemon juice into some milk to improvise the buttermilk, and replacing the all-purpose and whole wheat flours with einkorn and spelt flours (I’m more of an ancient grains kinda girl, or at least my belly is.) it worked out perfectly. The biscuits were crumbly and buttery, and the base of creamy greens was a savory masterpiece. We all had multiple helpings with nothing left for tomorrow.
